Avocado toast is the quintessential healthy comfort food. I enjoy its perfect balance of fat, fiber and protein for my morning breakfast, and it’s a favorite healthy afternoon snack with my kids. INGREDIENTS: 1 ripe avocado vegan mayonnaise extra virgin olive oil sea salt optional nutritional boost: sprouts DIRECTIONS: Slice the avocado in half lengthwise, being careful to cut around the center seed. Pull the two halves apart and scoop out the seed with a spoon. Then, slice the avocado meat into long, vertical strips. Scoop out with a spoon. On your favorite toast (gluten-free in my home), spread a thin layer of mayonnaise. Add the sliced avocado, a drizzle of olive oil, and a sprinkle of sea salt.
