Quinoa Burger

Ingredients 2 c quinoa (uncooked) 2 tbsp Better Than Bouillon Vegetable Stock 3 1/2 c water 1 bunch chopped scallions 5 c loosely packed, chopped spinach 4 cloves garlic, crushed 8oz cheddar cheese 6 eggs Coconut oil Directions Using 2 tbsp Better Than Bouillon Vegetable Stock & 3 1/2 c water prepare quinoa as directed on package, or using a rice cooker. In a large mixing bowl, combine patty ingredients thoroughly. Once mixture holds shape, form into 3″ patties. (Hint: Use water to wet your hands and avoid mixture sticking to your skin as you work) In a large saute pan cook patties over medium heat using coconut oil. Cook approximately 3 minutes on each side, flipping, or until patty is slightly browned. Remove patty from pan and place on plate to cool. Once cooled, patties can be placed into freezer safe bags and frozen. Reheat using a toaster oven or oven as needed. Bonus: Kid Friendly Quinoa! Instead of shaping into patties, make a quinoa pizza – Shape mixture into one large patty, cook as directed and cut into triangle “slices.” Both patties and Kid Friendly Quinoa can be topped with avocado, guacamole, or sliced tomatoes – just to name a few!]]>
