Another delicious spring and greatly under utilized vegetable is Fennel. Living in the cold North East I am always excited when I begin to see signs of spring. One of my favorite markers signaling that spring is on its way is asparagus on the produce shelves at the market. I look for firm spears with tight floret tops.
