http://backonpointe.tumblr.com/post/34835034655/myhealthyweighs-lemonade-cucumber-spa-pops Ingredients (Makes 3 cups of mix for pops) 1 cup seedless cucumber, julienned 1 lemon 2 cups cold water Natural sweetener (honey, maple syrup, stevia, xylitol, etc.) to taste Preparation Slice lemon in half and squeeze it over a strainer into 2 cups of cold water. Sweeten lemon water to taste with your favorite sweetener. Add the lemon/water/sweetener mix to ice-pop molds until two-thirds full. Place molds in freezer for about 1 hour. Remove pops from freezer. Scrape and stir any ice crystals that have formed. Add a spoonful of the julienned cucumber to each ice-pop. Be sure to leave a tiny bit of room at the top of each ice-mold so the mix won’t overflow when a stick is added. Use an ice-pop stick or butter knife to push the cucumber into the lemonade so it is evenly distributed. Add an ice-pop stick to each mold. Freeze pops for three to four hours or until solid.]]>
