Lemon, Tomato, and Feta Zucchini


  1. 4 medium zucchini
  2. Handful cherry or grape tomatoes
  3. Handful of feta
  4. 1 clove of garlic
  5. 4tbsp olive oil
  6. Juice of 1 lemon
  7. 1tsp honey
  8. Salt + pepper


  1. Pre-heat your oven to 350F. Crush garlic and add to 2tsp of olive oil.
  2. Half your tomatoes, pop onto a flat baking tray and drizzle with your garlic oil, salt and pepper. Roast tomatoes for 15mins.
  3. Crumble your feta over the top and add roasted tomatoes.
  4. In the same pot used for the garlic oil, mix together the lemon juice, honey and the rest of the olive oil.
  5. Pour dressing over and toss.
